Serves 4
Ingredients: 1 kg Marbled bovine flaps 1 kg Onions 50 gr Flour 50 gr Butter Vinegar Some thyme Bay leaf 2 spoons of mustard Piece of beef soup 2 pieces of brown bread without crust 0,5 ltr. of Guinness
Action:
Get the meat at room temperature. Cut the meat into small cubes of 2x2 cm. Put in a pot and mix well with flour, salt & pepper..., this is the secret to success and triumph. Fry the meat with butter in a heavy frying pan small portions at a time. Remove the meat and fry the onions slowly, approx. 10 minutes. Add the meat, vinegar, thyme, bay leaf, mustard, beef soup, bread, beer... Simmer gently 3 to 4 hours. In the last half hour see to the right consistency, not to wet.
Serve with red cabbage and mashed potatoes.
